Red River Relish Banana Bread

2 tsp baking powder
1 tsp baking soda
½ cup vegetable oil
½ cup sugar
2 eggs
1½ cup Red River Relish Original
3 mashed ripe bananas
½ cup chopped walnuts
½ tsp ginger

Preheat oven to 350 degrees. Lightly grease a loaf pan or empty Mason jars.

Mix together the flour, baking powder, baking soda, and ginger.

In another bowl, mix together the oil and sugar. Add eggs and mashed bananas. Mix well.

Slowly mix the dry ingredients into the wet ingredients, stirring constantly until fully blended.

Stir in the Red River Relish and walnuts. Pour mixture into prepared loaf pan or Mason jars.

Cook in middle of preheated oven for around 1 hour. Check readiness of loaf by inserting a toothpick into the middle of the loaf. If it comes out clean, the loaf is ready.

Allow loaf to cool in pan for 10 minutes before removing from pan. Place loaf on a wire rack to cool fully.
