Kicked-Up Deviled Eggs
6 large eggs, hard boiled
¼ cup Red River Relish Original
3 tbsp mayonnaise
2 tbsp chives or green onions, finely chopped
½ tsp cumin
Grated rind of ½ lime
Salt and pepper to taste
3 tbsp cilantro or parsley, finely chopped and divided
Cut eggs in half lengthwise.
Remove yolk and put in bowl with other ingredients. Mash yolks into the other ingredients and mix well.
Spoon back into the hollowed-out eggs.
Sprinkle with the remaining cilantro or parsley.
