Jalapeño, Cheese, and RRR Casserole

4 large eggs
¼ cup all-purpose flour
1½ tsp dry mustard
½ tsp baking powder
½ tsp salt
1 cup cottage cheese
1 cup shredded Monterrey Jack cheese (4 ounces)
1 cup shredded sharp Cheddar cheese (4 ounces)¼ cup unsalted butter, room temperature
Crumbled sausage, browned (optional)
2 jalapeños, stems and seeds removed, diced
½ cup Red River Relish Original
Salsa for serving

Preheat over to 350 degrees.

Lightly grease an 8 x 8 casserole dish or baking pan, or 12-cup muffin tin.

In a large bowl, beat eggs. Stir in flour, dry mustard, baking powder, and salt. Stir in cottage cheese, Monterrey Jack cheese, Cheddar cheese, butter, sausage, Red River Relish, and jalapeños. Mix until incorporated.

Pour egg mixture into casserole dish or muffin tin and bake for 20-25 minutes or until the top is lightly browned and the center is firm. Serve with warm salsa.
