Chow Chow Coleslaw

1/3 cup fresh lime juice
½ cup Red River Relish Chow Chow
¾ tsp kosher salt
¼ tsp freshly ground black pepper
3 tbsp olive oil
½ cup thinly vertically sliced red onion
½ coarsely chopped fresh cilantro
1 16-ounce package cabbage-and-carrot coleslaw

Combine first 4 ingredients in a large bowl, stirring with a whisk. Gradually add olive oil, stirring constantly with a whisk.

Add onion, cilantro, and coleslaw.

Cover and chill at least 1 hour.
